Water is used to cool down the car engine.it has high specific heat capacity.It can absorb a large amount of heat without a high increase in temperature.it is cheap and can be obtained easily.
I would recommend 5w30 and use fully synthetic so it will improve your vehicles life time but remember if you switch to synthetic you cant go back to regular oil it will cause problems but that's the best you can do for your mustang.
